    UPGRAIN®’s Lemon Mascarpone Pasta

    Our flat egg noodles meet the vibrant flavours of lemon, garlic, mascarpone, fresh herbs, & pine nuts, all crowned with a drizzle of olive oil and a sprinkle of Parmesan; perfect for special occasions with friends and family. A creamy, satisfying, and refreshingly unique dish that's bound to make your meal extra special!

    Lemon Mascarpone Pasta

    Serves 2

    Noodles:

    Ingredients:

    • ¼ cup extra virgin Olive Oil
    • Mascarpone Cheese
    • Parmesan Cheese
    • 1 Lemon
    • 1-2 Garlic cloves
    • ¼ cup Pine Nuts
    • Salt
    • Pepper
    • ½ cup of Chopped Thyme + Basil

      Cooking Instructions:

      1. Boil UPGRAIN® ½-carb Mee Pok according to instructions and set aside. Finely chop a ¼ cup of garlic. Dice and mince thyme and basil until fine.
      2. In a pan, drizzle ¼ cup of olive oil. When sizzling, add chopped garlic, the minced herbs, lemon juice, ¼ cup pine nuts, and salt. 
      3. Add the precooked UPGRAIN® ½-carb Mee Pok into the pan and top with mascarpone to your liking.
      4. Stir gently to combine until creamy and cohesive, adding a pinch of pepper. Add more cheese to thicken, or pasta water to loosen.
      5. On a plate, garnish with grated parmesan cheese, additional minced herbs and a light drizzle of olive oil.
      6. Serve and enjoy!

      4. Stir gently to combine until creamy and cohesive, adding a pinch of pepper. Add more cheese to thicken, or pasta water to loosen.
      5. On a plate, garnish with grated parmesan cheese, additional minced herbs and a light drizzle of olive oil.
      6. Serve and enjoy!
