    Sundried Tomato & Ricotta Pasta

    Serves 1

    Noodles:

    Ingredients:

    • 1 cup sun dried tomatoes with oil
    • ½ cup of cherry tomatoes, halved
    • 1 shallot, finely chopped
    • 3 garlic cloves, minced
    • 1 cup pureed tomatoes
    • 150 g ricotta cheese
    • ½ teaspoon crushed red pepper flakes
    • 1 teaspoon smoked paprika
    • Salt and pepper to taste

      Cooking Instructions:

      1. Heat the oil from the sun-dried tomatoes in a large skillet.
      2. Add diced shallot and minced garlic, stir-fry until fragrant.
      3. Stir in sun-dried tomatoes, cook for 5 minutes.
      4. Season with salt, pepper, red pepper flakes and smoked paprika.
      5. Add in cherry tomatoes and sauté for 1 minute.
      6. Into the pan, add the pureed tomatoes and simmer for 5 minutes.
      7. After 5 minutes, add in the ricotta cheese and mix to incorporate it into the sauce.
      8. Stir in your UPGRAIN® Mee Pok noodles.
      9. Serve immediately. Enjoy!
