    Bread & Butter Pudding

    Serves 1

    Brioche bread:

    Sauce and ingredients:

    • 3 Eggs
    • 2 ½ cups Milk
    • ½ cup Sugar
    • 1 teaspoon Vanilla extract
    • 1 tablespoon Lemon zest
    • 2 tablespoons Butter (melted)
    • 1 cup Fresh fruit (for topping - mix of blueberries, raspberries, strawberries, diced mangoes)

      Cooking Instructions:

      1. Grease your baking dish.
      2. Cube and layer the brioche in the dish, brush some melted butter on top.
      3. In a large bowl, whisk together eggs, milk, sugar, vanilla extract, and lemon zest (if using).
      4. Pour the custard over the brioche, and soak for 20-30 minutes so the bread really absorbs all the flavour.
      5. Scatter your chosen fruit over the top.
      6. Bake at 350°F for 40 minutes, or until custard is set and the top is golden brown.
      7. Let cool slightly. Enjoy warm or at room temperature!
