Creamy Carbonara

Pasta substitute:
- 1 pack of UPGRAIN® ½-carb mee kia(280g)
Sauce and ingredients:
- 1 tbsp Olive Oil
- 4 cloves garlic minced
- 100g onion small diced
- 200g bacon or pancetta, diced
- 50g mushrooms, diced
- 1 tsp garlic powder
- 1tsp onion powder
- 1 pinch of pepper
- 50g cream cheese
- 2 egg yolks
- 120g heavy cream
- 50g cheddar cheese
- Milk to loosen
Garnish:
- Spring onion & Grated Parmesan as desired
Cooking Instructions:
- Sauté onion and garlic in olive oil until fragrant and translucent.
- Add bacon and mushrooms; fry until mushrooms release water.
- Add garlic and onion powder with pepper into the pan.
- Reduce heat, add cream cheese, mix thoroughly.
- Mix egg yolks and cream in a separate bowl until uniform.
- Combine cheddar cheese with egg yolk mixture.
- Pour mixture into pan, stirring well; remove from heat.
- Boil and drain noodles, add to pan with some pasta water.
- Stir until thickened, adjust with more pasta water if needed.
- Plate, garnish with parsley and parmesan.
