    UPGRAIN®’s Creamy Carbonara

    Creamy Carbonara

    Serves 4

    Pasta substitute:


    Sauce and ingredients:

    • 1 tbsp Olive Oil
    • 4 cloves garlic minced
    • 100g onion small diced
    • 200g bacon or pancetta, diced
    • 50g mushrooms, diced
    • 1 tsp garlic powder
    • 1tsp onion powder
    • 1 pinch of pepper
    • 50g cream cheese
    • 2 egg yolks
    • 120g heavy cream
    • 50g cheddar cheese
    • Milk to loosen

    Garnish:

    • Spring onion & Grated Parmesan as desired

    Cooking Instructions:

    1. Sauté onion and garlic in olive oil until fragrant and translucent.
    2. Add bacon and mushrooms; fry until mushrooms release water.
    3. Add garlic and onion powder with pepper into the pan.
    4. Reduce heat, add cream cheese, mix thoroughly.
    5. Mix egg yolks and cream in a separate bowl until uniform.
    6. Combine cheddar cheese with egg yolk mixture.
    7. Pour mixture into pan, stirring well; remove from heat.
    8. Boil and drain noodles, add to pan with some pasta water.
    9. Stir until thickened, adjust with more pasta water if needed.
    10. Plate, garnish with parsley and parmesan.
