    Cheesy Beef Pita Recipe

    Serves 6

    Pita bread:


    Filling:

    • A handful of pizza cheese
    • 1 large onion (quartered)
    • 1 large onion (sliced)
    • 100g peeled garlic cloves
    • 200g olive oil 
    • 100g sliced button mushrooms
    • 3 capsicums (red, yellow and green)
    • 1 zucchini 
    • 300g minced beef mixture 
    • 1 tsp curry powder
    • 1 tsp garlic powder
    • 1 tsp onion powder

    Cooking Instructions:

    1. Preheat your oven to 250°C and line a baking tray. 
    2. Quarter onions, peel garlic. Combine with olive oil to submerge and salt in an oven-safe dish. Cover with foil & bake at 180°C until garlic is soft and spreadable (approx 1-2 hours).
    3. Roast capsicum, onion, zucchini at 180°C in the oven, coated with olive oil on sheet tray for about 20 mins, rotating the tray every 5 mins.
    4. In a pan, quickly brown the mushrooms. Remove, then brown the minced beef with the curry, garlic, and onion powder.
    5. To assemble, slice and toast the pita lightly, then spread garlic confit, add beef, mushrooms, and vegetables.
    6. Top with cheese. Broil at the highest setting with your oven for 30 secs to 2 mins until cheese is bubbly and golden.
    7. Slice and serve while hot for maximum delight!
